Spinach Dip

Ingredients

  • 1 lbs cream cheese
  • 4 oz heavy cream
  • 4 oz milk
  • 16 oz chopped spinach
  • salt, white pepper and nutmeg to taste
  • 4 oz Parmesan reggiano cheese, ( grated )
  • 3 oz Danish Blue cheese
  • 2 chopped fresh shallots
  • 4 cloves chopped fresh garlic
Combine cream cheese, heavy cream, milk, salt, pepper, nutmeg ( freshly grated whole nut gives better results.)

Bring to a simmer (without burning) until all ingredients become one

Fold in blue cheese and parmesan cheese, cool and place in refrigerator

Just before serving ( could be next day, to assure the green color of spinach remaining green) add 16 oz chopped and squeezed dry spinach ( can be frozen )

Place in one large or 6 individual 6 oz ramekins.

Cover with plastic wrap and place in refrigerator until time of serving.

Place large ramekin in microwave for 4 minutes, individual 4 oz ramekins microwave for 2 minutes ( Should be at least 180 degrees F, but not steaming hot )

Serve with French bread, rye bread, and sesame crackers or other favored crackers.

Again, the idea is to do all the preparation the day before leaving time to for the women to pamper herself for her man on Fathers Day… and still cater to him!
